Vanilla & Sunflowers No Bake Protein Energy Bites

I am not a big fan of protein bars. Most of them taste either bland, sugary, or just downright disrespectful. Amidst the fitness craze, having the right type of protein is doubly important as the amount of it in one serving. Which is why I go with creating my own plant based protein snack that is quick, easy, and tasty.

This recipe took me no less than 5 minutes to whip up and can be stored in your fridge for up to two weeks.

Enjoy these bites for those morning and afternoon snacks or for after your strength training sesh at the gym. Great for those weekly meal preps! :

INGREDIENTS

  • 1 cup Gluten Free Old Fashioned Rolled Oats

  • 1/3 cup Vanilla Complete by Juice Plus+

  • 1/2 teaspoon Chia seeds

  • 1/3 cup Sunflower seed butter (I used the brand, SunButter)

  • 1/3 cup organic unsweetened applesauce

  • 2 tablespoons vegan chocolate chips

  • 2 tablespoons chopped walnuts

INSTRUCTIONS

  1. In a medium bowl, mix together all the ingredients.

  2. Roll batch into small to medium size balls.

  3. Place on wax parchment paper and refrigerate 2-3 hours to harden. Makes 12-15 bites.
